We grabbed a 6kg whole beef tenderloin to feed our family of 15 for this past Christmas dinner. The other sauce is a simple and decadent truffle cheese melted into a pot of boiling 35% whipping cream. High cholesterol? You bet. It’s Christmas.
Season the meat, we grilled ours on the gas stovetop on a thick cookie sheet and banged it directly into the oven, cooking it for another 30 mins until it was a sexy medium rare all the way through. Plate it with garlic mash as we did above, or just throw it on the floor and toss it around like a pack of wolves. Either way, it’s good eating!
