
Baking season is upon us, and mine will be a busy one. I normally tackle a measly two or three dozen each Christmas, but this year I’ve also signed up to bake the gingerbread man (or Gingerbread Guys in this case) for two dozen kids to decorate at a holiday party. I wanted a new recipe, a new gingerbread man, a new tradition. In Rosie Daykin’s second cookbook I have found just that.
I’m no stranger to Rosie, in fact, I’ve gushed about her before on this blog thing. Rosie owns a beautiful bakery in Van City and is known for not only her baked goods but aesthetic. Her bakery (and it’s delectable goods) are a feast for the eye as well as the palate, but fierce 6-ers rejoice, replication of these goodies is acheiveable, by way of Rosie’s latest book Butter Celebrates! which is out just in time to rock my holiday world.
While I can’t go into the details of her particular recipe, I can tell you it was a different approach to making my old gingerbread men. Using a double boiler to blend the molasses and sugars results in a fluffier dough, and that translated to tasty cookies. My old recipe is officially turfed! These cookies are moist, a totally different texture than the previous recipes I’ve made.
